What the texts say

सम-स्थूल-कृशा भुक्त-मध्यान्त-प्रथमाम्बु-पाः
sama-sthūla-kṛśā bhukta-madhyānta-prathamāmbu-pāḥ
Those who drink water in the middle, at the end or at the start of a meal become, in turn, of moderate, stout or lean build.[1]

Vagbhata gives the effect of timing but no reason for it. Sushruta says to drink water with judgement while eating and after the meal. His line sits in a passage about enjoying food, where he also advises rinsing the mouth between dishes so that each one tastes fresh.[1][2]

The modern view

We have not found a study that tests when to drink water in a meal against body weight or build. The rule rests on the classical texts alone.
